Quick, yummy, healthy Mash that even the Kids LOVE!

Here’s a super-quick recipe for Mashed Potatoes and Carrots that I have recently learned from my lovely Belgian Au-Pair and that our kids just LOVE!
What You Will Need:
For a family of 4:
6 medium sized carrots and potatoes
1 small onion
1 Tbsp olive oil
1 cup of milk
40g of butter
Salt and Pepper to taste
…and the Secret Ingredient: the yolk of 1 egg
Boil pealed potatoes and carrots in one pot until very soft. Meanwhile dice the onion into small cubes and fry in the olive oil. When the potatoes and carrots are soft, mix all ingredients and mash together well. Serve with sausages or burgers. Yuuuuum!
